Hey, so, I tried something similar, using applesauce, and it had a nice texture, but was bland.  Since you seem to have a good knowledge of baking, would you please be willing to help me figure out what happened?

I made the following recipe, which is like yours ... moreover i modified the below by excluding the egg, then splitting it into 3 equal bowls ... then adding carrot into 1/3, banana into 1/3, and punkin in 1/3 ... oh, and i added an egg to each.  The final result was bland.  Ideas please :]

This is what i tried
&quot;BANANA GRAHAM MUFFINS

Serving Size : 16 
2 cups Graham cracker crumbs
1 3/4 cups All-purpose flour
1/3 cup Light brown sugar -- packed
1 tablespoon Baking powder
1/2 teaspoon Salt
1 cup Mashed bananas -- very ripe
1/2 cup Unsweetened applesauce -- natu
1/4 cup Skim milk
1 Egg
1/2 teaspoon Vanilla extract
1/2 cup Pecans; chopped -- optional

Preheat oven to 400 degrees; line muffin cups with paper liners or spray with nonstick cooking spray. In a large bowl, combine the graham cracker crumbs, flour, brown sugar, baking powder and salt. In a medium bowl, whisk together the bananas, applesauce, milk, egg and vanilla extract. Stir into the flour mixture just until moistened. Fold in the pecans, if desired. Spoon evenly into the muffin cups. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Immediately remove from the pan; cool on a wire rack for 10 minutes. Serve warm or cool completely.</description>
